Vanilla Cupcakes

Okay, I'm quite busy lately. But here I would like to share something that I WANT TO DO BADLY. Wish I have so much time to try this out! Huhu

Ingredients

  • 200g butter, softened
  • 1 3/4 cups (370g) caster sugar
  • 2 tsp vanilla bean paste
  • 4 eggs
  • 2 3/4 cups (405g) self-raising flour
  • 1 cup (250ml) milk
  • Butter frosting

  • 200g butter, softened
  • 6 cups (900g) icing sugar mixture
  • 1/2 cup (125ml) milk
  1. Preheat oven to 180°C. Line 24 1/3 cup (80ml) muffin pans with patty cases.
  2. Cream the butter, sugar and vanilla bean paste with an electric mixer. Add the eggs, one at a time, and beat until just combined. Add the flour and milk in alternate batches and stir with a wooden spoon until just combined.
  3. Spoon mixture evenly among the patty cases. Bake for 15-20 minutes or until cooked through. Remove from oven and transfer to a wire rack to cool completely.
  4. For the frosting, use an electric mixer to beat the butter until very pale. Gradually add the icing sugar while beating. Add the milk and beat until well combined.
  5. Divide frosting into small bowls and colour. Use a small palette knife or round-bladed knife to spread the icing.

Notes

  • Decorating tips:

  • Colour: Add colouring gradually until you've reached the desired shade. Paste colouring offers a greater variety of shades and a more intense hue than liquids. Butter that is very yellow will affect the colour; unsalted butter gives a paler base after beating.
  • Frosting: Ready-made fondant icing can be coloured by kneading in drops of liquid or paste colouring. Roll flat on a surface sprinkled with pure icing sugar and use a biscuit cutter to cut out circles. Secure with a dollop of jam

Lazy day





Saturday. Woke up a lil bit later than usual. Brought Maleec to breakfast at NZ. He was grumpy. Then, went to Ampang Puteri Specialist for check-up. Still grumpy. Good news: Adik's head dah pusing towards the right position. Later, back home as Maleec fell asleep. Till 5pm, nothing much I did. Then brought him to carpark to play with his car. At night went to pasar malam. I spent RM4.00 (1.2- fau fu fah, 1.8-popia, 1- keropok lekor). Malam, chat with hubby.

But I guess Juma had fun today. He went to Mangga Dua and other places in Jakarta. He experience riding Bajai where he paid extra because of his weight issue. And he bleed his knee because he can't get out from that Bajai! Hahaha!

Day 3 Juma in Jakarta

Nothing special happened today. Hubby is still in Jakarta. Putri is still in Vietnam. I'm still late to work. But yesterday gave me a little shock. Amer, one of our Milkmen, been terminated. I don't know the reason but I guess it must be because of his performance.



Today, I closed 1 more deal. It's a interior design consultation from Desigva. Great deal to me. But the owner, Vanessa, was so busy that she can't even have time to fill up the form. Thus I have to go to her office, again, and get the complete form from her. Then went to Taman Melawati for spa deal. The owner doesn't seem eager about that.

Hubby was there all along, temaning me at YM. As I reached home quite early, I managed to bring Maleec down to taman to play. But bibik really spoiled my day. Entahlah. Dah tahu I marah, baru nak buat elok-elok. 


At night, we had a video conference. Terubat rindu pada my sayang. He said that his room rate at Hotel Mulia, Jakarta is USD250 per day. Hmm.. to me, it is damn expensive. Well, enjoy your stay sayang! I don't care how much Halliburton is paying for that, as long as I receive my gold bracelet soon! Cheers!

Mother's Day and Day 1 Daddy In Jakarta

First and foremost, HAPPY MOTHER'S DAY, MAMA! You are my best friend forever that nobody can ever replace you. Thanks for being such a great mom to me, mother. I love you endlessly!

Ok, let me update what happen today. Everything seems to happen fast till hubby aboard KLIA Express. We woke at 9 am and had breakfast at NZ Wangsa Walk. Back home, he continued packing. Later, we headed to KL Sentral via LRT train. Maleec, of course, the most excited person. His became over-reacted when another choo choo passed us by. Hahaha.. His expression is priceless!



And we waved daddy goodbye at KL Sentral before enjoying our lunch at KLCC KFC. Then I got myself a body lotion from my favorite Mark & Spencer. Maleec was asleep when we reached home. Thus I quickly ran to Wangsa Walk to change my BB. Back home, we waited for Maleec to wake up and joined Kak Zakiah's son birthday party. The food, as usual, was marvellous. And Kak Zakiah made a cake for his beloved youngest son in a shape of ball, to honour his interest in football.

Then, time flies slowly. I miss my hubby badly. I miss you, Yang. Rindu sangat. And at 10.05 pm, my wait ended when I received THE call. Huhu.. Rindu sangat. And now I'm waiting for him to come online.

Frappucino and Bumper

Rain made me late to the office, again. I blame the rain. I reached my office at 9.00 am, half an hour late. Luckily Shaun was in a good mood. And I wasn't the latest. Yay!

Had my meeting at Bandar Sri Damansara Club House with a tennis coach. Hopefully a good deal will come out soon!

During lunch time, I parked my car in front of the office gate. And since my car is the nearest to the office, all of us (Putri, Alan, Syira, Wirda and I) went to lunch with my car. But Putri was the one who drove it, since I was so exhausted. Hehe. Please bear with this pregnant lady ya! At one of the traffic light, while all of us happily chatting in the car, a big bang hit my car at the back. All of our head turned back and saw Wilson behind the wheel. Wilson, my dear boss, just hit my bumper!! Huargghhh!!! I was so shocked to be angry or whatever the feeling that I supposed to feel. Plus I wasn't mad because I know the person who hit the car personally. And the most important thing is I know that the person can pay for it. Hahahaha!

After checking the car at a workshop in Kepong, I headed back to Wangsa Maju. And to chill up, hubby and I lepak at Starbuck, enjoying our Frappucino, at half price.
